Heerings is a Danish Cherry liqueur, with a history starting in 1818. It has a bitter sweet medicinal flavour that lends itself well to pepping up things. We have done this with a cherry compote
1kg cherries , de seeded and washed
125g caster sugar
3 lengths of orange peel
200ml herring cherry liquor
juice of 1 lemon
1. In a pan, bring the sugar, water and orange peel to the boil.
2. Add the cherries and poach for for 5 minutes, then spoon out the cherries
3. Add the liqueur and reduce the liquor by half until it is a flowing syrup and take off the boil.
4.Add back in the cherries and the brandy, We serve ours with a buttermilk pudding and malt biscuit
